Granny
Smith - This variety of Green Apple is typically
firm, crisp and crunchy and is known for its juiciness
and acidity. The Granny Smith’s skin is typically
firm contributing to the crunchiness of the fruit
and the flesh is primarily white with a slight green
tint. Though this variety’s popularity is waning,
it is still desirable for its use both as fresh table
fruit and as a cooking ingredient. First exported
to Britain from Australia in 1930’s but now
grown in all warm fruit-producing regions such as
Spain, Southern France, Italy and many Southern Hemisphere
producing regions. Highly desirable in Northern Europe
and the UK where the climate does not permit cultivation.

Pink
Lady/Cripps Pink -
Originally cultivated in Western Australia, this variety is extremely desirable within the UK. Typical fruit has an attractive pink flush and is typically firm, providing an appealing crunchiness. The flesh is creamy coloured with a predominately sweet flavour which contains honey overtones. Predominately grown in Australia and New Zealand but recent popularity and increased demand has led to planting in South Africa, USA, France and Italy. Due to the unsuitable climate, this variety cannot be cultivated in the UK though it is a primary destination for this product. Strict regulations apply with regards to product labelling with only the best examples carrying the name Pink Lady. Less perfect examples are sold as Cripps Pink though the internal characteristics are almost identical.

Gala/Royal
Gala - This variety, originating in New Zealand,
is known for its rich, honeyed flavour and high levels
of juiciness. Royal Gala and Gala varieties are immensely
popular and are now grown in all major apple growing
regions. Royal Gala distinguishes itself from the
Gala variety by being more intensely coloured. A typical
fruit of the variety will feature an orange-red flush
and the juicy flesh is characteristically cream coloured.
