Persian Lime (Tahiti or Bearss Lime) - Externally this variety is almost indistinguishable from the Mexican (also known as West Indian or Key Lime) Lime and is often confused with an immature lemon. In many producing countries harvest is a year round process. Of the two main types of lime commercially available, the Persian lime is the less desirable of the two. The majority of Persian lime that enters Europe comes from Mexico and Brazil though Florida, Israel and Belize, Guatemala, Honduras and Venezuela are known to produce.

Mexican Lime (also known as Key or West Indian Lime) - When fully mature, the fruit has a yellow colour with some greenness however, when harvested early, the fruit retains a deep green colour. In tropical climates, multiple crops are common but in sub-tropical climates a single annual crop is more common. The juice of the Mexican lime regularly contains more acid than lemon juice and its sugar content can be extremely low. Leading producers of the Mexican lime are Mexico, Brazil and Peru.
